strawberry salsa

I have a bountiful harvest of strawberries and need some creative ways to use them.

Strawberry Salsa

1 qt strawberries
1 jalepeno
3-4 sprigs cilantro (or more to taste)
1 small white onion (or any onion you have)
juice of 1/2 lemon (or lime)
1 tbsp sugar (sweetener - to taste - some strawberries are very sweet and need no help)

Place all ingredients in the food processor and roughly pulse to desired consistency.

Place in plastic storage container and freeze overnight. The cold temperature mascerates the berries and blends the tastes.

Allow to thaw the next day and enjoy!

Serving ideas:
pancakes/waffles/toast
salad dressing
serve as a counterpoint to savory foods (poultry etc)

I made a very similar salsa this weekend with some of the strawberries we picked. I hadn't thought to freeze it though. Interesting. I served ours with grilled chicken and grilled shrimp.
A neat fruit salad: strawberries & a can of pineapple chunks, use the juice as a marinade. Add chopped cilantro and sliced ginger root. Add any other tropical fruits like kiwi or mandarins - yum!
